Crescent Dragonwagon's Pecan-Cinnamon Triangles
Ingredients:
- 1 3/4 cups unbleached white flour
- 1 cup semolina flour
- 1/4 cup whole wheat flour
- 1/3 cup sugar
- 1 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup plus 1 tablespoon warm water
- 2 teaspoons vanilla extract
- 1/2 cup pecans
Preparation:
- preheat oven to 450 Fahrenheit (very hot oven essential)
- make a dough out of flours, sugar, cinnamon, salt, vanilla and water
- divide dough into 16 small pieces, dust with flour, let them rest for 10 minutes
- chop pecans into medium fine meal (food processor; NOTE: I can't replicate this with my equipment; for me the pecans always come out as a sticky slodge)
- for each ball:
- sprinkle with pecan meal
- roll out
- sprinkle second side with pecans
- roll out until you have see-through disc
- cut disc into 8-10 triangles
- bake 3-6 minutes until cookies start to bubble. then flip and bake another 2-4 minutes until golden. The critters burn easily.
Don't worry, this dough can take it!
Rolling the dough is very therapeutic, I can tell you.
